Ingredients

  • 1 package (16 ounces) dried black-eyed peas
  • 5 cups water
  • 1 green onion, chopped
  • 3 teaspoons chicken bouillon granules
  • 3 teaspoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon chili powder
  • 1 teaspoon coarsely ground pepper

Directions

  • Sort peas and rinse with cold water. Place in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until softened. Drain and rinse peas, discarding liquid.
  • Return peas to the pan; add the water, onion, bouillon and seasonings. Bring to a boil. Reduce heat; cover and simmer for 40-45 minutes or until peas are tender.

Give classic hot dogs a makeover with this innovative Everything Bagel Dogs recipe. To make these Everything Bagel Dogs, wrap beef franks in refrigerated pizza dough, sprinkle them with everything bagel seasoning and cook them until lightly browned.

  • Heat oven to 425°F.
  • Cover rimmed baking sheet with parchment. Divide pizza dough into 30 small balls, using about 1 Tbsp. dough for each ball. Roll each ball into 6-inch-long rope.
  • Wrap 1 rope piece around each frank piece; pinch ends and seams of dough together to seal. Place on prepared baking sheet; brush with egg.
  • Add bagel seasoning to small bowl. Working with 1 wrapped frank piece at a time, hold frank over bowl of seasoning while sprinkling with seasoning; return to prepared baking sheet.
  • Bake 13 to 15 min. or until lightly browned. Transfer bagel dogs to wire racks; cool slightly.
  • Serve with ketchup.

Combine tapioca, milk, egg yolk and 3 Tbsp. sugar in medium saucepan. Let stand 5 min.

Meanwhile, beat egg white in small bowl with mixer on high speed until foamy. Gradually add remaining sugar, beating constantly until soft peaks form.

Bring to full boil on medium heat, stirring constantly. Remove from heat. Quickly stir egg white mixture into hot tapioca in saucepan until well blended. Stir in vanilla. Cool 20 min. Stir before serving.

Use Your Microwave
Combine tapioca, milk, egg yolk and 3 Tbsp. sugar in 1-1/2-qt. microwaveable bowl. Let stand 5 min. Beat egg white in small bowl with mixer on high speed until foamy. Gradually add remaining sugar, beating constantly until soft peaks form. Microwave on HIGH 7 to 8 min. or until mixture comes to full bowl, stirring every 2 min. Quickly stir egg white mixture into hot tapioca until well blended. Stir in vanilla. Cool 20 min. Stir before serving.

Variation
Substitute 2 Tbsp. cholesterol-free egg product for the egg yolk and granular no-calorie sweetener for the sugar, stirring the sweetener into the cooled pudding. (Do not substitute cholesterol-free egg product for the egg white since it can't be beaten to form soft peaks as directed in recipe.)

How to Double
Prepare using 1/3 cup MINUTE Tapioca, 1 or 2 eggs, and doubling all other ingredients. Makes 12 servings.

To Halve
Prepare recipe using 1 egg, and half each of the remaining ingredients. Makes 3 servings.

Note
For creamier pudding, press plastic wrap directly onto surface of pudding while cooling. Stir before serving.
